مقایسه دیدگاه مصرفکنندگان کپور ماهیان پرورشی در مناطق جغرافیایی ساحلی تا کوهستانی جنوب دریای خزر

چکیده
با توجه به کاهش ذخایر آبزیان در حوضه جنوبی دریای خزر با بررسی رفتار مصرف­ کنندگان مناطق چهارگانه، شامل مراکز 3 استان حاشیه جنوبی خزر، مناطق ساحلی، بندری تا کوهستانی در مورد مصرف کپورماهیان پرورشی مورد بررسی قرار گرفت. پس از طراحی پرسشنامه و استانداردسازی آن از طریق محاسبه روایی و پایایی آن، حجم نمونه در سطح 1390 خانوار انجام گرفت. به‌علاوه، جهت توصیف خصوصیات جمعیت‌شناختی، از آزمون‌ فریدمن برای تعیین اولویت­ ها و آزمون کروسکال­-والیس برای بررسی معنی ­داری اختلاف­ ها بین عوامل مؤثر در مناطق استفاده شد. بیشترین مصرف ماهی کپور معمولی در منطقه کوهستانی، بیشترین مصرف ماهی آمور و فیتوفاگ در منطقه بندری و ماهی سرگنده در منطقه ساحلی است. بیشترین سرانه مصرف ماهی به میزان 5/9 کیلوگرم و 2/6 کیلوگرم برای کپورماهیان پرورشی مربوط به شهرهای بندری بود. اولویت خرید انواع عرضه در مناطق، عمدتاً به‌صورت کامل، زنده، شکم خالی و منجمد بود. در مناطق مرکزی اهمیت با اولویت بو و آلودگی، تازگی و طراوت ماهی و سپس رنگ و ظاهر ماهی بود. در منطقه بندری اولویت ­ها معنی­ دار نبوده و بین مناطق ساحلی و کوهستانی مشابهت وجود داشت. در بررسی عامل سلامتی، ارزش و اثر خرید تمام اولویت­ های مورد بررسی در مناطق مشابه بودند. دوستان و متخصصان در خرید ماهی مناطق مؤثر بودند اما فقط اثر خانواده در مناطق بندری بیشتر از مناطق مرکزی بود. با وجود سوابق تحقیقاتی متعدد مبنی بر کاهش مصرف ماهی به نسبت افزایش فاصله از سواحل در مناطق مختلف جهان، اما در این تحقیق به‌دلیل فاصله کوتاه مناطق ساحلی با مناطق کوهستانی در حوضه جنوبی دریای خزر و همچنین دسترسی فراوان به کپورماهیان پرورشی در مقابل کاهش ذخایر دریا تفاوت­ های فاحش و قابل انتظاری در گرایش مصرفی مشاهده نشد. به‌طوری که اختلافات اندک در این مناطق می­تواند به اتخاذ راهبردهای محلی جهت افزایش فروش و مصرف این ماهیان کمک نماید.

Comparing the views of consumers of farmed carp in coastal to mountainous geographical areas of the southern Caspian Sea

Due to the decline of aquatic resources in the southern basin of the Caspian Sea, the consumption behavior of residents in four regional categories- including the central areas of the three southern Caspian provinces, coastal areas, ports, and mountainous regions-was examined with a focus on the consumption of farmed carp species. After designing and standardizing the questionnaire through validity and reliability assessment a sample size of 1390 households was selected. In addition to describing demographic characteristics, the friedman test was used to determine priorities, and the Kruskal-Wallis test was applied to assess significant differences in influential factors across regions. The highest consumption of common carp occurred in mountainous areas, while grass carp and silver carp were most consumed in port regions, and bighead carp in coastal areas. The highest per capita fish consumption was 5.9 kg, of which 2.6 kg belonged to farmed carp, mainly in port cities. Preferred forms of fish purchase included whole, live, gutted, and frozen. In central regions, odor and contamination, freshness, and appearance were the most important factors. In port areas, priorities showed no significant differences, and coastal and mountainous areas had similar patterns. Regarding health, value, and purchase important, all examined priorities were similar across regions. Friends and specialists influenced fish purchases in all areas, but family influence was notably higher in port regions compared to central ones. Despite widespread findings worldwide indicating reduced fish consumption with increasing distance from the coast, this study did not observe such substantial differences. Short distances between coastal and mountainous regions in the southern Caspian basin, along with high availability of farmed carp species and declining marine stocks, likely explain this pattern. Minor differences between regions suggest that tailored local strategies could effectively enhance sales and consumption of these fish species.
