Hence in our research, Methanolic extracts of marine cucumber Holothuria leucospilota were extracted and fillets fish stored in the refrigerator were treated with, in different concentrations (0.5, 1 and 2%), in order to evaluate the chemical quality of fillets. The fillets were kept in the refrigerator for 16 days and chemical tests including volatile bases nitrogen (TVB-N), thiobarbitoric acid (TBA) and pH test were done every 4 days. The results showed that the amount of volatile bases nitrogen (TVB-N) in treated samples with extract in 1 and 2% concentration did not exceed the acceptable level until the last day, while the amount of this index in the control samples until the 8th day and the treated samples with 0.5% concentration of the extract, was acceptable until the 12th day. Thiobarbitoric acid (TBA) was acceptable in all treatments, except in treatment with 2% concentration until 8th day, though the treated samples with an extract of 2% concentration in the last day of storage were more than expectation. The pH index was lower in the samples treated with sea cucumber extract throughout the storage period than the control samples. Based on the results obtained in this study, it can be concluded that cucumber extract can be used as a natural preservative for fish fillets during the short-term storage period in a refrigerator condition and up to 2% concentration is suggested for this procedure.}, keywords = {Sea cucumber extract,Fish quality,Fish spoilage,Shelf-life}, title_fa = {تأثیر عصاره خیار دریایی Holothuria leucospilota بر کیفیت شیمیایی فیله ماهی شوریده (Otolithes rubber) طی دورۀ نگهداری در یخچال (1±4 درجه سانتی‌گراد)}, abstract_fa = {منابع دریایی حاوی ترکیبات زیست فعالی هستند که قابلیت استفاده در صنایع غذایی به‌عنوان نگه‌دارنده را دارا می­ باشد. در این تحقیق عصاره متانولی خیار دریایی گونه Holothuria leucospilota استخراج و اثر غلظت‎های مختلف آن (0/5، 1 و 2 درصد) بر کیفیت شیمیایی فیله ماهی شوریده نگهداری شده در یخچال مورد بررسی قرار گرفت. فیله‎ها به­ مدت 16 روز در یخچال نگهداری شدند و هر 4 روز یک­بار آزمون‎های شیمیایی شامل مجموع بازهای نیتروژنی فرار، شاخص اکسیداسیون ثانویه چربی (تیوباربیتوریک اسید) و pH ارزیابی شد. نتایج نشان داد که میزان بازهای نیتروژنی فرار در نمونه‎های تیمار شده با عصاره 1 و 2 درصد تا روز آخر نگهداری از حد قابل قبول تجاوز نکرد در حالی که مقدار این شاخص در نمونه ­های شاهد تا روز 8 و نمونه‎های تیمار شده با 5/0 درصد عصارۀ مذکور تا روز 12 قابل قبول بود. میزان تیوبار بیتوریک اسید نیز در همه تیمارها به‌جز تیمار 2 درصد تا روز 8 قابل قبول بود اما نمونه‎های تیمار شده با عصاره 2 درصد روز آخر نگهداری از حد قابل قبول بیشتر شد. شاخص pH نیز در نمونه‎های تیمار شده با عصاره خیار دریایی در تمام طول دوره نگهداری نسبت به نمونه شاهد کمتر بود. بر اساس نتایج می­ توان بیان نمود که عصاره خیار دریایی می ‏تواند به‌عنوان یک نگه‌دارنده طبیعی برای فیله ماهی شوریده در طول دورۀ نگهداری کوتاه مدت در شرایط یخچال مورد استفاده قرار گرفته و تا غلظت 2 درصد برای نگهداری ماهی شوریده پیشنهاد می‌گردد.}, keywords_fa = {عصاره خیار دریایی,کیفیت ماهی,فساد ماهی,مدت ماندگاری}, url = {http://www.aquaculturesciences.ir/article_70589.html}, eprint = {http://www.aquaculturesciences.ir/article_70589_3e47539f31cb4da0cde286325c342d88.pdf} }
