For this purpose, micro-coating is a desirable and practical method. On the other hand, tomato sauce is a condiment that is consumed a lot, hence its enrichment with omega-3 can improve its nutritional value. In the present study, microcapsules containing of omega-3 are first prepared from fish oil. Depending on the use of the microcapsules, a combined wall of gelatin and gum arabic was used. Three teams (5, 6, and 7%) were evaluated to achieve the best percentage of walls to the core of the microcapsules. Measurements of surface oil, encapsulated oil, total oil, stability, release and size were done on the produced microcapsules. The results showed that the highest efficiency of microencapsulation was achieved with the 6% omega-3 treatment having the lowest surface oil and controlled release (P≤0.05), showing its better quality. According to the results, the treatment of 6% (core/wall) was chosen for the enrichment of the tomato sauce. In the next step, the tomato sauce was enriched with different concentrations (0.5, 1, 1.5 and 2%) were enriched and then fat and sensory evaluations were conducted to verify the acceptability of the prepared sauce. According to the results, the enrichment of tomato sauce with microcapsules containing up to 1.5% omega-3 has good and acceptable sensory properties (P≤0.05), suggesting its use in the production of tomato sauce to enrich and improve its nutritional value.}, keywords = {oxidation,Omega 3,Microcapsule,Enrichment}, title_fa = {تولید و ارزیابی میکروکپسول‌های حاوی امگا-3 جهت غنی‌سازی سس گوجه فرنگی}, abstract_fa = {استفاده از روغن امگا-3 در رژیم غذایی دارای فواید بسیاری برای سلامتی انسان­ ها می‌باشد اما به‌دلیل طعم و بوی نامطلوب جهت استفاده از آن در غنی‌سازی مواد غذایی مختلف ابتدا باید از انتشار بو و طعم آن جلوگیری کرد. بدین‌منظور، ریزپوشانی روشی مطلوب و کاربردی می‌باشد. از سویی دیگر سس گوجه فرنگی از چاشنی‌هایی است که موارد مصرف زیادی دارد و غنی‌سازی آن توسط امگا-3 می‌تواند سبب بهبود ارزش تغذیه‌ای این ماده غذایی پرمصرف شود. بنابراین در تحقیق حاضر، ابتدا اقدام به تولید میکروکپسول‌های حاوی امگا-3 حاصل از روغن ماهی شد و با توجه به نوع کاربری میکروکپسول‌ها از دیواره ترکیبی ژلاتین-صمغ عربی استفاده شد. جهت دستیابی به بهترین نسبت هسته به دیواره میکروکپسول‌ها، سه تیمار 5، 6 و 7 درصد مورد ارزیابی قرار گرفتند. آزمون­ های روغن سطحی، روغن انکپسوله، روغن کل، پایداری، کرمی شدن، رهایش و برآورد اندازه روی میکروکپسول­ های تهیه شده صورت گرفت. طبق آزمون­ های انجام شده روی میکروکپسول ­های تولیدشده، نتایج نشان داد که بالاترین بازدهی ریزپوشانی در تیمار 6 درصد (هسته به دیواره میکروکپسول‌ها) مشاهده شد و این  تیمار از لحاظ میزان روغن سطحی و همچنین رهایش کنترل­ شده کم­ترین مقدار را داشت (0.05≥P). بنابراین با توجه به نتایج آزمون­ های انجام شده، تیمار 6 درصد برای غنی ­سازی سس گوجه­‌فرنگی انتخاب شد و در مرحله بعد غنی‌سازی سس گوجه‌فرنگی با غلظت ­های مختلف (0/5، 1، 1/5و 2 درصد) میکروکپسول‌ها انجام شد. سپس آزمون ­های چربی کل و ارزیابی حسی جهت بررسی پذیرش سس غنی شده انجام گرفت. با توجه به نتایج ارزیابی‌های انجام شده، غنی‌سازی سس گوجه‌فرنگی با میکروکپسول‌های حاوی امگا-3 تا غلظت 1/5 درصد مطلوب بوده و سس تولیدی از ویژگی‌های حسی خوب و قابل قبولی برخوردار بوده است (0.05≥P). از این‌رو استفاده از میکروکپسول­ های تولیدی در تهیه سس گوجه‌فرنگی جهت غنی­ سازی و بهبود ارزش غذایی آن پیشنهاد م ی­شود.}, keywords_fa = {اکسیداسیون,امگا-3,ریز‌پوشانی,غنی‌سازی}, url = {http://www.aquaculturesciences.ir/article_166935.html}, eprint = {http://www.aquaculturesciences.ir/article_166935_a3d9de8787a172a0c53967db34f97ad5.pdf} }
